The food truck began as a creative solution during a challenging season. With donations declining and operational costs rising, we needed a way to support our programs without relying solely on traditional fundraising. The Food Truck became our summer-long fundraiser—something fun, community‑oriented, and sustainable.

What we didn’t expect was the impact it would have on young people. Each summer, the truck allowed us to employ a couple of students, giving them real work experience, confidence, and a sense of belonging. Seeing how meaningful that opportunity was for them sparked a bigger vision: to create a full‑service restaurant where we could offer year‑round employment to more youth, not just one or two students for a few months.
